Spicy and sweet abondigas (meatballs)

I am taking you on a cooking  journey, we will be making spicy yet sweet abondigas (meatballs). I will be using chipotle chilis, ground beef, rice and many different vegetables. This dish is well known all through the Latin countries. I also added my own flavors to enhance the dish. This dish can be made to put over rice, pasta or stand alone. I can honestly say this dish is a crowd pleaser.

Ingredients:

1 lb lean ground beef

1 egg for every lb of ground beef

rice or quinoa

1 or 2 tomatoes sliced

1/2 a large onion diced

minced garlic

splash of hot sauce

1 or 2 chipotle chili in adobo sauce minced or chopped (be careful these are super spicy!)

salt and pepper to taste

 

Step 1:  combine these first ingredients into large mixing bowl until mixed really, really well.   You will be making the meatballs by grabbing a small handful of meat and roll it around in your hand forming balls.  Leave them in the bowl until needed thus marinating the flavors.

Step 2:  I would start making the soup or sauce for these marvelous Abondigas.   Halfway fill a soup pan with water and add some chicken stalk (Knorr Caldo de Pollo is my favorite.)  or beef, but I like the chicken stalk as it has a better taste.   add some minced garlic or tomato sauce 1/4th a can, to add some more flavor if you like.

Step 3:   After the water/stalk has been boiling for about 5-10 minutes you can add the meatballs you then can add the meat balls and cook on medium or low heat for about 20 minutes.   After the 20 minutes step 4

step 4:  Add some cut vegies, for example I add some potatoes, tomatoes, onions, zucchini, carrots, and cauliflower.  I have added green beans and canned vegies before, but it does taste better if they are fresh, washed and cut..   Cook until vegies are tender and meatballs are cooked thoroughly serve in a soup bowl or make sauce and serve on plate..  This is a dish that needs your touch and your flavors…   And please never forget to add LOVE!  Happy Cookin’
